Finding Bawarchee Hyderabadi Biryani is perhaps the most challenging part of the experience. Inside Continental Chambers on Karve Road, it is easy to miss from the main road. But once you locate it, you can gorge on what is arguably one of Pune’s most authentic Hyderabadi biryanis.
For Episode 4 of Ek Plate Biryani, I set out to find a biryani that stays true to its roots. What I discovered was a biryani that comes extremely close to the flavours of Hyderabad without any unnecessary gimmicks.
Kacche Gosht Ki Biryani Done Right
Bawarchee serves a traditional Dum Style Kacche Gosht Ki Biryani. Raw marinated meat and rice are cooked together in dum, so the flavours develop naturally over time. Unlike many commercial biryanis that are heavily on oil, ghee and overpowering spices, Bawarchee takes a healthier approach. So their biryani feels light yet intensely flavourful.
One important characteristic of authentic Hyderabadi biryani is the absence of visible masala coating every grain of rice. Instead, the flavours are infused in the rice during the cooking process. Bawarchee captures this style beautifully.
Rice Verdict: 8/10
The rice is fragrant, perfectly cooked and packed with flavour without becoming greasy. The balance of spices is excellent, allowing the dum cooking process to shine.
Tender Meat That Steals the Show
The highlight of this biryani is undoubtedly the chicken. Cooked slowly in its own juices, the meat remains exceptionally tender and flavourful.
Every morsel has the distinct taste profile that Hyderabadi biryani lovers seek—rich and aromatic without being overly spicy.The quality of the meat is top-notch and reflects proper sourcing and preparation.
Meat & Masala Verdict: 10/10
For authenticity, balance and execution, this is one of the strongest meat and masala combinations we have encountered in the series so far.
Bonus Points for Quantity and Authenticity
The medium-sized biryani comes with a generous portion of meat, including one leg piece and one thigh piece. As if that wasn’t enough, the plate is also topped with a few pieces of original Chicken 65.
The accompaniments elevate the experience further. Authentic Hyderabadi salan, refreshing raita and Chicken 65 make the meal feel complete.
Meat : Rice Ratio Verdict: 10/10
The quantity of meat comfortably matches the rice and earns full marks. Also brownie points for Chicken 65 on the top!
Final Verdict
Bawarchee succeeds where many Hyderabadi biryanis in Pune fall short. It delivers authentic flavours, excellent meat quality. Also limited use of oil and a traditional cooking style that lets the ingredients speak for themselves.
Add authentic salan, Chicken 65 and generous portions; and you have one of Pune’s most compelling biryani.
