Sonal Snacks opens twice a day, serving customers from 10:00 AM to 1:00 PM, and from 6:00 pm to 10:00 pm. They fry everything strictly in fresh batch of groundnut oil each day. The shop also serves crisp Kanda Bhaji (onion fritters), but with a unique catch. They serve bhaji only from 9:00 pm during the final hour of business. The owners know that frying onions spoils the quality of the oil. Serving bhaji at the end allows them to safely dispose off the used oil at night and start every morning with a fresh batch of oil.

Watching the staff work is an experience in itself. As soon as a fresh batch of bread pattice fries to a light golden brown, the cook dumps them onto the main counter. A long-time employee cuts each hot pattice with practiced rhythm, one long cut followed by two quick cuts across. He then drenches the pattice with a generous scoop of sweet tamarind chutney. Finally topping the plate with fresh sliced onions and fried green chilies.
