When you think of biryani, you imagine long-grain basmati layered with meat and cooked in the traditional Mughlai style. Thalassery Biryani from Kerala is a completely different one.

For Episode 3 of Ek Plate Biryani, I headed to Mallu Stories on Dhole Patil Road to try one of the rare places in Pune serving this iconic Kerala speciality. At first, the biryani appears deceptively simple. The rice looks pale and subtle compared to the colours often associated with biryanis. But appearances can be misleading.

The Magic of Kaima Rice

The defining feature of a Thalassery Biryani is its rice. Instead of basmati, this biryani uses short-grain Kaima rice, a variety that is highly prized in Kerala. The smaller grains absorb flavours exceptionally well.

Every morsel carries the richness of ghee, the sweetness of fried onions and the warmth of balanced spices. The rice remains fluffy and light, yet delivers an impressive depth of flavour. Don’t be fooled by its white appearance. This rice is surprisingly potent and leaves your palate coated with aromatic spices.

Kerala Flavours Take Centre Stage

Beneath the rice sits chicken prepared in a distinctly Kerala style. Unlike many dum biryanis where the meat simply absorbs the flavour of the rice and masala, the chicken here has its own identity. It is fried and cooked in a Kerala-style masala that has unique regional flavours rarely found in Pune.

The chicken is tender, juicy and well-cooked throughout. The spices are bold without being overwhelming.

More Than Just Biryani

The plate is served with refreshing raita, traditional Kerala-style pickle and a crispy rice papad. Priced at just ₹180, this biryani is excellent value for money. While the portion is ideal for one person, the quantity of chicken is particularly generous.

In fact, the meat comfortably matches and even exceeds the amount of rice served.

For those looking to explore regional Indian biryanis beyond the familiar Mughlai styles, Thalassery Biryani is an introduction to Kerala’s flavours. Rare to find in Pune and packed with authentic flavours, this Thalassery Biryani is well worth venturing out.
