With the winter setting in the city, adding coldness to the weather, bringing out all the woolies, here is a special dish from Gujurat which will warm your heart.
\nUndhiyu, is a very special mix vegetable one pot dish that hails from Surat. The name itself suggests its peculiarity that this is an upside down dish. According to the elderly ‘Ba’ in my neighbourhood, the name of this dish is derived from the Gujarati word “undhu”, which means upside down. This dish is traditionally cooked upside down underground in earthen pots, termed “matlu”, which are fired from above.<\/p>\n

The one pot dish has some of the most amazing vegetables which are found only during winter from November to February in the market, like Surati papdi,
\nsweet potato, Kaccha kela (raw banana), small brinjal (vangi), and purple Yam (kand) along with Potato and cooked along with the vegetables are those hand rolled methi muthiya.
\nThus on a quest to warm my insides with some yummy warmth, I set out on the task to find some Undhiyu sold in Pune.<\/p>\n

In the city, you can get it off the counter or order from home-chefs. It costs Rs 450\/- to Rs 600\/- a Kg and can be delivered anywhere in the city.
\nThere are two types available in the city, the green Surti Undhiyu, which many say is the authentic one, while one cooked with red masala. Recommended to order a day before for freshly made Undhiyu, it takes half a day of slow fire cooking.<\/p>\n
